Important note: This is a live course where the students, only enrolled in this particular course through Ramakrishna Mission Vidyamandira, West Bengal’s website are allowed to access. They attend the classes regularly conducted by the instructor and here we have the updated recorded videos of the whole session available. Those students who belong to this batch can access the videos any time as per convenience.

Course Outcome:
After doing this course an individual will be knowing the following – Basic
principles of Ayurveda and their application; Analysis of food items;
Digestion principles and how to alter food habits intelligently; Traditional
food practices and its importance to live disease free especially in our
country. Planning of most appropriate diet according to individual needs.

 

Course Outline:
Unit 1: The Foundations of Ayurveda and Nutrition (6 hours)
• Introduction to Ayurveda and the Five Elements (Panchamahabhuta)
• Understanding the Three Doshas and their Role in Health. Exploring
Dhatu (Tissues) and Mala (Waste Products).
• Understanding Gunas (properties).
• The Concept of Prakriti: Understanding Individual Constitution
• Agni (Digestive Fire): Understanding digestion according to
ayurveda, types of agni and their role in digestion, Nyaya.
• Ama (undigested food): Causes and Effects on Health
• Influence of digestion on equilibrium of doshas.

Unit 2 : The Power of Taste and Food Analysis, Dinacharya and
Ritucharya (6 hours)
• The Six Tastes (Rasa) and Their Impact on the Body
• Aahara Parinamkara Bhava: The Transformative Power of Food
• Ashta aahara vidhi vishesha ayatanaani (8 Steps to Analyze Food):
Ayurvedic Principles of Food Evaluation
• Practical Application: Identifying Imbalances of doshas and role of
aahara in attaining equilibrium. – Aahara as Aushadha
• Dinacharya: The Daily Rhythms of Eating and Health, rules of
eating.
• Ritucharya: Aligning Food with Seasonal Changes

Unit 3: Integrating Tradition with Modernity in Diet Planning (6 hours)
• Optimizing Food Choices according to climate, geography and
accustomization. – oksaatmya
• Traditional Food Habits Across Regions and Ethnicities
• Pathya-Apathya: Food’s Role in Healing and Disease Prevention.
Concept of Saatmya – Asaatmya, Hita- Ahita.
• Personalized Diet Planning Based on individual needs.
• Simple Food recipes and their therapeutic importance – Manda, Peya,
Vilepi, Yavagu, Yusha, Krushra, etc.
• Analyzing modern food habits through ayurveda principles and
making necessary changes to optimize health.
